Ingredients:
- 450g cod or haddock a little lemon juice
- 650g potatoes knob of butter
- 30ml milk
- 300ml cheese sauce
- 15ml chopped parsley
- 50g grated cheese
- Parsley and tomato slices to garnish
Method:
- Peel the potatoes and cut into evenly sized pieces.
- Place in a microwave proof dish with 5-6 tsp of water.
- Cover and cook on 100% microwave power for 8-10 minutes until soft mash the potatoes with butter and milk until smooth and creamy.
- Keep warm then wash the fish and place in shallow dish,sprinkle with lemon juice cover and cook on 100% microwave power for 3-5 minutes until the fish flakes easily.
- Flake the fish and remove any bones then combine the fish with warm cheese sauce and parsley place in a casserole dish carefully place at the mashed potato on the top and sprinkle with grated cheese.
- Place the dish on the metal rack on turntable cook on combo for 15-20 minutes at 180C or until cheese has melted.
