Kashmir mutton rogan josh
Prep Time:10-15 min ! Cooking Time:1.5 hours !Difficult Level:Medium
Ingredients:
- 500 gm lamb cubed
- 1/2 Cup yogurt
- 1 tsp fennel seeds powder
- 1/2 tsp ginger powder
- A big pinch of asafoteida
- 1/4 tsp turmeric powder
- 3-4 Dry red chili powder
- 2 Black cardamom
- 1 tbsp clarified butter and mustard oil
- 2 Cups of lamb stock or water
- 1 Cup water
- Salt to taste
- 2 Bay leaves
- Coriander leaves to garnish
Method:
- In a pan heat mustard oil along with clarified butter(Rogan Josh traditionally cooked in mustard oil but you can use use any other oil of your choice...)
- When oil get enough heat.Add black cardamom,bay leaves,asafoteida...
- Now add mutton peaces stir it well and cooked for 10 minutes until the mutton change its color...
- In a small bowl combine turmeric powder,red chili powder,fennel seeds powder,ginger powder and yogurt.Make a paste of this...
- After 10 minutes you can see the mutton peaces change there color.Add the masala in it and mix it well...
- At this point also add salt as per your taste and mix it well...
- Cover it with lid and cook it for 10 minutes on medium flame until the masala is cooked well...
- You can see mutton is cooked well with masala and put it in pressure cooker as you know the mutton takes long time to cook,Put enough water and stir it quickly...
- Close the pressure cooker and cook it for 3 to 4 vessels until done...
- After getting one vessels make the flame low...
- After 3 vessels put dry powder(Dry powder you can make by use of spices like pepper corn,cinnamon,cloves and cardamom)...
- Cook it another 5 to 10 minutes on low flame...
- Our Kashmir mutton rogan Josh is ready garnish with coriander leaves.Serve with plain rice or with Indian bread...
