Vegetable Salad
Cuisine: Indian ! Category: Salad ! Serves: Serves 2 ! Prep time: 10 Minutes
Ingredients:
- 1/2 Soft bread loaf
- 2 Medium tomato
- 1 Medium onion
- 1 Large cucumber-Peeled
- 1 Bunch fresh basil leaves-Chopped
For Dressing:
- 1/4 Cup extra virgin olive oil
- 2 tbsp red wine vinegar
- Salt to taste
- 1/2 tsp crushed black peppercorns
- 1/2 tsp mixed dried herbs
Method:
- Preheat the oven to 108 C...
- Cut bread into small cubes...
- Then put the bread cubes on a baking tray and drizzle with olive oil...
- Sprinkle peppercorns,salt and dried mixed herbs...
- Place the tray in a preheated oven and toast the bread till it became crispy...
- Deseed and cut the cucumber and tomatoes into cubes...
- Cut the onion into cubes and separate it layers...
- Then for dressing take 3 tbsp olive oil in a bowl,add vinegar,salt,mixed herbs,crushed peppercorns and basil leaves and mix it well...
- Mix vegetables and crispy bread cubes in another bowl.Arrange the veggies and bread on serving plate,pour dressing on top and serve yummy Vegetable Salad...
