- 200g Easy cook long grain rice
- 2-3 Rashers of bacon(cut into pieces)
- 50(2oz) butter
- 1 onion (chopped)
- 1 Stick celery (sliced)
- 1/2 Green pepper(sliced)
- 600ml Hot chicken stock
- 50g Mushrooms
- 200g Cooked chicken meat(diced)
- Salt and pepper
- Place the butter,onion,celery and salt pepper in large microwave proof bowl cover and cook on 100% microwave power for 3 minutes.
- Stir in all remaining ingredients,cover and cook for 12 to 15 minutes until the rice has absorbed the liquid.
- Stir once or twice and stand for 5 minutes before serving.
